Swiss Water Process.
Green beans are soaked in hot water to remove caffeine and compounds responsible for much of the flavor of the coffee
. The first batch of green beans is discarded. The liquid is run through activated carbon filters which removes the caffeine. This leaves the liquid saturated with the coffee flavour, which is used to soak a 2 nd batch of decaff green beans.
